Beef Stew

So this is one of those recipes that is such comfort food that I love when it’s cold enough to finally make it. My mom used to make this for me and I always loved it – it’s just so filling and delicious! The other thing I love about it, is that it is one of those recipes that helps stretch a dollar. It makes tons of food and for not too much money (and most of it is vegetable which makes it healthy). Stew meat is inexpensive and a little goes a long way in this stew. Yum!

My Mom’s Beef Stew

1 yellow onion
1 lb stew meat, cut into 1/2″ pieces
seasoned flour (around 1/3 c)
4 cloves garlic, chopped
2 red or yellow potatoes, 1″ dice
1 cob of corn, kernels removed
1 cup green beans
1 cup sweet green peas
2 tomatoes, chopped
4 carrots, peeled and 1/2″ slice
one small can tomato paste
several cups of beef broth
salt and pepper, to taste
parmesan cheese

Toss beef with seasoned flour. Add just enough olive oil to cover the bottom and add beef when hot. Brown beef for several minutes then add onions. Cook for several minutes longer and add garlic. After 3 minutes more, add all of the vegetables and the beef broth. Simmer for 30-45 minutes (or longer if wanted). Garnish with parmesan cheese. This can also be prepared in a crock pot, once you have the beef browned. Serve with crusty French bread!

(Shortcut option: use canned veggies.)

    I love stew…I told Jeremy just the other day that we are finally coming to the soup/stew time of the year!
