Chicken Carne Asada Tacos with Pickled Onions

I’m not sure that this truly qualifies as a carne asada dish, since I was under the impression that carne asada was beef, but regardless, this recipe was a winner. It uses cheaply priced boneless, skinless chicken thighs and marinates them in a combination of citrus juices and spices. I used feta instead of Cotija cheese, since I already had it around and it was a great substitution. The pickled onions were a delicious acidic touch that cut through the richness of the chicken, feta and avocado. I served it with mashed black beans, heated through in some chicken stock and seasoned with some cumin. If you plan ahead enough to marinate the chicken and onions, this is a great weeknight meal.

    This looks great…you’re right it wouldn’t be carne asada, it would be pollo asado!

      Cooking Light had a misnomer! Pretty silly, why didn’t they just call it pollo asado?

    I love Tacos, they have recently become an obsession! This sounds like an interesting variation and I’ve been pickling some onions which should be ready to sample soon.
